How do you Bacon?

Are you a "fryer" or a "baker"?

I've borrowed this photo from Becky Higgins' site, but I've started baking my bacon and LOVE it.  Have you tried it?

I've posted some tentative 2011 retreat dates.  I need to do some fine-tuning of the dates, but looking for input.  Any thoughts on these dates?
